The pro's
- it is more powerful than most of the others, so it heats water quicker.

Con's
- There is no user interface on the unit, other than a button on top you press to make the initial connection to wifi, which can also be used to power it off. It is controlled completely by your cell phone. For some this is problematic. My take is the unit has less moving parts, less things that can break, and allows for the smaller compact size. I find the phone app very easy and intuitive, and don't miss having controls on the unit itself. It's likely easier to choose and set what you want with the phone app than if you had to spin dials and press buttons on the device. Plus the app has helpful graphics on preparation.
- The real main con with this product is connectivity. Please read all the way through. Often it will delay to connect, and sometimes you have to restart the app or the phone to get it to connect. It has had this problem for a long time - I know because I bought one when they first came out. It is frustrating, and why they let this problem go for so long is beyond me. Now, most of the time it works fine. I find if you open the app after you plug in the Joule, it works better. With that being said.....I just received my second one. Even with the connection issue, the pro's I mentioned outweighed the con's to where I still preferred this over the other options. I've had it about two weeks now, and I can say the connection issue has gotten much better. It is still there, but less frequently and for shorter periods of time. I'd say overall the connection issue has improved about 50%. They do update the app and the device from time to time over the wifi. Also, the other products that have a wireless connection have their share of complaints about them
Common to all Sous Vide circulators
- they all do a good job of maintaining less than 1 degree variation (that's for circulators, not instant pot type sous vide which is questionable for sure)
- They cook the same so your results will be the same. Note that meat cooked sous vide may look like it is less cooked, but it isn't, it's just the evenness of the cooking. You can always adjust the temperature for more doneness. Also, if you are searing afterwards, you can go one temperature lower (if you want medium, set it for medium rare), since it is already heated all the way through, searing will quickly bring it up to the next temperature.

When I got it I put it to use immediately. Took about 5 minutes to setup on my phone with the app. I used it in an 8 quart pot with ribeye steak and chicken breast (I cooked them separately). It took only 11 minutes to heat up 72 degree water to 149 degrees for the chicken breast. Once at that temperature it stayed very consistent, within 0.2 degrees. Amazing! Temperature control devices at my work (food production) don't do as well in terms of consistency.
Chicken breast came out very moist, best I ever had. But, I was concerned it may have been undercooked however all juices ran clear. Ribeye was perfect medium rare...I couldn't have done better with reverse sear or on the grill. Of course this cooking method takes longer, but it is worth it because you really don't have to worry about it...true set it and forget it until the app notifies it is done. The app does say you can cook for up to 2 hours over the recommended time and it will still be fine...FYI.
Some people complained the alarm wasn't loud enough. But hey, use your phone and the app and it is fine. It is as loud as your phone is so I'm not sure what those people were talking about. Even if you lose connection it will still go on and the app will still time down so you'll be fine.

The Joule is a great device, it works well when required, and does what it is sold as and makes no fuss about cleaning and storage. The app for the device is an imperative add on, Joule cannot be controlled with out it. Now that will be a double edged sword for many, it works very well and will simply your experience of starting sous vide cooking greatly if you follow the guides. For me that was a bit of a learning curve, my first foray was a steak I used the steak guide and was met with mediocre results, what I should have used was a “flank steak” guide that has a much longer cook time. The lesson to this is type in and search for what exactly you have and you’ll find a guide for what your looking for with great results. I found I needed to start with basic things like eggs and deserts to get my sea legs with it first, then tackle more advanced things. Through the guides I learned their method of batch cooking food for a week, I use this all the time since I get one day off from work. It saves time by cooking my breakfasts and lunches in one shot on that day, leaving me free for the rest of my days for my family. The results of the batch cooking are impressive to say the least and my coworkers are very envious of the food I bring in. As a construction worker eating healthy strong meals makes my day easier.
The ugly side is the app is very hungry for space, I shut off the video guide when the app to 1.6 gigs of space on my phone; once off it was still a hefty 600 megs. People hate the need of an app, I cook tri-tip and pork shoulder with 18-24 hour cook times and I use the app to make sure all is well. But should the app break my device would be useless, and there is no work around for that yet. I found I just need to be specific with the device, it’s no microwave where it cooks anything in a minute. You are taking on a PRECISION device and you need to be specific on what you are cooking, the app helps ease that pain as well and improves results with excellent guides.
Faults and all it is an excellent device, my life has improved with the use of the Joule. I love how much ChefSteps really takes a wholistic approach to cooking, and does it’s best to inform you the user of new ideas and guides to make the most of your purchase and lifestyle. I hope you enjoy sous vide as much as I do.
