The die through which the dough is extruded that comes with the unit isn't as strong or robust as the cylinder or the ring that holds the die in place. I had a new die (star shape) cut from 2mm stainless steel that works wonderfully. I mount the press on a bench vice that is secured to my counter and am able to turn the crank with one hand while my other hand is free to handle the extruded dough. This setup works well for me. If I do decide to launch a cheese straw business, I might look at ways to mechanize the extrusion process. But until then, this product works well, except for the somewhat flimsy die that comes with it.
This product would get 5 stars if it came with 5 strong usable dies rather than one weak one that allows for the user to select one of five shapes.

- The dough is leaking badly around all parts at the the spritzing and behind the pushing rod. It is a bit messy because of that.
- When I took it apart at the end of the job, I found dough worth of 3-4 cookies at least still inside the cylinder. I rolled them by hand (no wasted dough!).
- Another annoying thing was the nut holding the handle kept unscrewing itself while cranking.
- Disappointed it is made entirely of aluminum, not quite healthy for my personal preferences and standards on kitchen utensils..
