LEM's Natural Casings make juicier, tender sausage. They provide a distinctive "pop" when you bite into sausage stuffed in natural casings. These casings should be rinsed in warm water several times, then soaked in water for one hour until soft and pliable. Refrigerate after the bag has been opened. To store, cover casings with salt, place in an air-tight container and refrigerate.
A Note About 141 - 8 oz. Natural Hog Casings & 234 - 5 oz. Natural Sheep Casings: The 141 8 oz. pack of Natural Hog Casings and the 243 5 oz. pack of Natural Sheep Casings contain what the industry calls "shorts". These vary in length and diameter. Some reviews have complained that these casings are not a full hank. As a home "stuffer" I am very glad that they are shorter lengths. I am not set up for 25 feet of sausage casing. These lengths were 3-5 feet and were very manageable. I had one piece of about 4 feet that was "fragile" I will not characterize the casing as bad. I don't have the experience to say it was the casing or the "stuffer" that caused the blowout. I will say that overall the casings were forgiving for my abilities and I ended up with some very good lengths of linguica.
Overall, I was pleased with the quality, the ease of use and I WILL make more cased sausage and I will definitely be using these LEM casings. I was very happy with my outcome.
I'll say - the pieces are 2-3 ft long. I'm used to standard casings which are more like 6 ft long. This is kind of a pain, because you have to load casings on the stuffer more often, and it's harder to get a whole batch of even links. With a 6 ft casing, you can stuff 3 1/2lbs into one casing, get it laid out and even it up, then turn it into links that are all the same size.
They're also sort of browner color and not so uniform than the previous casings I've gotten. And aren't shipped packed in salt, (also like previous casings, I've bought) - so you have to soak the whole batch to separate all the little pieces, find some of the longer pieces, then dry and pack the remainder in salt. (or throw it away).
